Foodie Corner – Sunday 31st July 2011

This is not so much a foodie Corner as Foodie Rant this week.  The wonderful soda bagels I'd been buying for the last two weeks (see last week's Foodie Corner), have now completely disappeared from the shelves in Tesco.  Not even an 'Out of Stock' label.  Why?

 Foodie Corner   Sunday 31st July 2011I love Tesco (I love Supermarkets), but … they do so badly at providing an alternative to 'plastic' bread etc.  There's row upon row of steamed, 'plastic' bread, rolls etc, but barely anything natural.  The wonderful bagels from the Natural Bagel Company, and the Genesis Crafty soda bagels are now gone (after only two weeks instore), and my enquiry to the staff elicits the usual blank look, a shrug and the inevitable reply, "It's Head Office."

I know it's controlled from Head Office, but please can someone listen to us foodies who want to eat 'proper' bread, bagels, wraps etc (ie ones that aren't full of emulsifiers and mono-diglycerides: ie hydrogenated fats).  Do you want that in your food?

I'm lucky enough to be able to get Hobbs House organic wholemeal bread, or their Sherston white (which I order from a local Delicatessen), but sometimes I like a muffin, crumpet (Warburton's), or a bagel.  Come on Supermarkets, offer us a better choice please, and when are you going to start selling grated carrot?

Only Asda sell it, and it's such a brilliant and versatile ingredient for the time-pressed cook.  You can sprinkle it onto salads for a great colour and crunch, use it in sandwiches (dry, or mix in with any 'wet', mayonnaise-y type filling), wraps, or add it to any number of hot meals or soups – either at the last moment if you want it crunchy, or a couple of minutes before serving if you want it softer.

images112 160x160 Foodie Corner   Sunday 31st July 2011I know it's easy to grate carrots (if you're doing a load and have a food processor handy), but not if you just want a handful, as if you use a grater the bits fly everywhere, and the Asda carrots aren't as watery as if you do them yourself either, which makes it nicer on a salad.  I've asked Tesco before, and look expectantly every week but …

Hey: got some fruit going soft?

IMG 0758 160x160 Foodie Corner   Sunday 31st July 2011This is SO easy.  Just get ripe plums, peaches or nectarines (or a combination), and cut them in half.  Take the stone out and lay them in a baking dish.  Top with either whole strawberries, blackberries or raspberries and bake in the oven at about 160 degrees for around 20 minutes.

Two ingredients, and only takes a few minutes to prepare.  This is one I did last night for a BBQ, just before I popped it in the oven.  (If you've cooked a main meal, just put them onto the top shelf of the oven – switched off – while you eat it, and they'll be cooked by the time you're ready for them!)

Sainsburys Raspberry Shortbread Thins TTD 160g1 e1312103515634 Foodie Corner   Sunday 31st July 2011Serve with any sort of cream, greek yogurt, fromage frais or ice cream and some nice biscuits.  My current number ones are these Raspberry Shortbread Thins from Sainsbury's.  (Sorry this photo's so small, but the one I've taken myself won't upload.  It's an intermittent/irritating problem with WordPress.)

If you want to be posh, you can add liqueur (ie Amaretto), vanilla extract and/or chopped nuts (you don't need any sort of sweetner as the fruit's very sweet), and if you've got any left, it's wonderful cold mixed with natural yogurt (cheaper and better than all those sugar-filled ones).

I've spent the last 17 years of my life having to prepare, cook and clear up from a meal in about 10 minutes maximum (before then being able to actually take that food up to my room to eat it), so have got many healthy recipe ideas that have only a handful of ingredients and literally take moments to prepare.  I'd love to turn them into a cookery book one day.  It's got a great title …

PS Don't forget: make sure you wash all fruit and vegetables before use. Think how many people's dirty hands have been on that food before you bought it (especially if it was loose in a Supermarket). Do you really want to put that in your mouth?  Just a thought …

PPS If you're a Cafe/Sandwich shop/Restaurant owner; have a sign up TELLING your customers you wash your salads etc. It would certainly make me make a point of buying from you!

I had to nip to Tesco unexpectedly on Thursday teatime, and suddenly felt like having a treat.  I usually go and look along the ready-meal shelves to see if there's anything wonderfully exciting, but there rarely is, especially in the pastas (which I KNOW will always disappoint me), but then I saw this.

Ignoring the fat/calorie content, I popped it straight in my basket.  I don't normally buy ready meals, and defininitely wouldn't buy ANY with spaghetti in (because they all use this weird type of spaghetti that looks like children's bootlace licorice and has a right funny texture), but I was buying it for the sauce, and I must say – it delivered.

It was rich, creamy and you could REALLY taste the fishy-ness of it.  If they sold this sauce as just a pasta sauce, they'd have an absolute winner!

Despite it being out of stock twice this week (I've literally been in to Tesco on my way to my office three times in total just to get them), I finally got some yesterday.  These are my new favourite toasted item.  They're so 'stodgy' (but it a good way!), completely delicious, and no chemicals/additives either.

They also had some wonderful bagels a couple of weeks ago, from 'The Natural Bagel Company', but – as is usually the case in Supermarkets – they had them in for two weeks and now there's no sign of them any more.


IMG 0738 160x160 Foodie Corner   Sunday 24th July 2011There's no point in asking as I know I'll get the same response: "There wasn't any demand for them."  Of course there's no demand – if you don't have them …  It infuriates me when this happens.  Not everyone wants to eat bread-type products which are full of chemicals  (which is one of the reasons those soda bagels are so good).  When will the Supermarkets offer a regular, reliable alternative to the mass-produced rubbish?

In their defence, all Supermarkets offer some good things, but all too often, they get something nice in and then stop doing it – citing lack of sales as the reason.  Just get more stock, keep them in stock, and give them a PROPER trial.  Foodies will get to know they're there, and then you'll sell even more!

While I'm on a rant: wraps.  Have you SEEN the amount of chemicals in ALL the wrap-type products in Supermarkets?  Mono di-glycieride this, Emulsifier that.  Why do these things need to be in there? Sainsbury's used to do a (chemical-free) Organic wrap but … you've guessed it; they discontinued them earlier this year.  Can't anyone produce a tortilla wrap-type item that's not full of chemicals?

You CAN get really thin, soft breads in some Farmers Markets/Foodie/Health/Asian shops, but not where I live.  Come on Supermarkets, give us something chemical-free!

IMG 0724 225x300 Foodie Corner   Sunday 24th July 2011Here's a really quick way of topping fine green beans.  I'd seen Jamie Oliver do it with a pack of something and as I had two packs to do last weekend, thought I'd give it a try.  Result!

Simply shake the pack so that the ends with the stem on are all level, then lay it on a board and simply slice straight through.  So simple!  It took less than a minute to do both packs, as opposed to a good five or so by having to do them in little batches as I'd normally have done.

I always keep a little jar of instant coffee in my car in case the houses I clean at ever run out (it's hard to spend a whole day cleaning without sustenance!), and as I was running low, when  IMG 0614 150x150 Foodie CornerI saw this 'Millicano' coffee half price in Tesco the other morning I bought it.  You can't see from this photo, but it's instant coffee with real coffee added, and claims to be the 'Best Instant ever'.  If it hadn't been on offer I wouldn't have bothered, but I'm really glad now that I did.

Instant coffee's always claiming to be 'As good as the real thing', but we all know it's nothing like it … or at least it wasn't – until now.  When you add hot water to this stuff, it actually looks like real coffee, and when you get to the bottom, it's got that thin layer of coffee film you often get with cafetiere coffee.  Most importantly though: it tastes great!  It's not the real thing, but it's a damn good substitute!

IMG 0574 150x150 Foodie CornerI don't eat a lot of red meat (I'm living with my dad at the moment, and if I cooked a steak he'd be there with his head in the pan, so it's easier not to bother), but when I occasionally house-sit, my dinner's always a steak and some good red wine!  I'm not a big fan of Tesco meat I'm afraid – I'll usually go to my local butcher, Waitrose or Sainsbury's, but I just happened to see this a few weeks ago.  It was 'New', and I have to say, it was delicious.  I've not had one since to compare it to (in case it was a one-off), but this one was excellent.  (Sorry, the photo's chopped half the pack off but I can't work out how to fix it!)

They had "Coronation Coleslaw" in Sainsbury's recently, but I find 'bought' colelsaw too greasy/slimy, so made my own instant version.  Either grate your own carrot/cabbage or buy a bag of coleslaw mix, then make the dressing.  I used salad cream, a little natural yogurt, raisins and some 'normal' curry powder to taste.  Just mix it all together, add the carrot/cabbage and that's it … done!  A nice, refreshing twist.

I paid an unscheduled visit to Pizza Express a couple of weeks ago, but due to not being able to upload photos properly at the moment (it won't upload any photo I've taken on my iPhone all of a sudden), I've not been able to get these up before today.  My wonderful new web guy has fixed something up temporarily, but the sizing still isn't right, so that'll be a challenge for this week.

IMG 0587 150x150 Foodie CornerIn the meantime, I just wanted to say that even though I'm not vegetarian I usually have the Fiorentina pizza, but on the night I went (by myself), they had 2 courses for £10 so I had this tomato/mozzarella salad too, and (apart from the IMG 0588 150x150 Foodie Cornerbasil dressing being too salty) I have to say that it was the best food I'd ever had in there.  The pizza was cooked just right, and the salad was SO fresh and tasty that I have to admit to having woofed the lot. Accompanied by a large glass of Barossa Shiraz; it was a fine meal!

I also wanted to put this other photo up too.  The bowls are quite small but look large on this photo (in case you think I'm a pig!).  This is a meal I knocked-up a recently in less time than it would take to do something that took longer …

The sauce took only minutes to prepare and was made in the same pan I'd cooked the penne in.  (This is the most basic version, but you could add nutmeg, chilli, finely diced onion/shallot, olives etc, etc if you've got the time/inclination.)  I just took the skin off a couple of sausages (there's such a great variety of spicy/smoky ones these days, it makes sauce-making so easy), and popped them in the pan then broke them up with a spoon so it was like mince.

IMG 0594 150x150 Foodie CornerI then fried them for a couple of minutes before then simply slinging in a tin of my favourite 'instant' sauce: Sainsbury's Chair De TomateIMG 0425 150x150 Foodie Corner with a pinch of sugar, and simmering it for a couple of minutes before adding the penne back in, popping it in the bowl and grating pecorino and a healthy whack of black pepper over the top.
